No. 16 pan is a medium size wok perfect to cooking one-dish food, especially fried rice.  It can be used for deep fry cook or perfect for all chinese food style.

Recommendation:

1. Before start using, the pan should be heat treated to remove coating oil, then clean by water and start using it.
2. After finishing, just clean with only water (no detergent regquired). The cooking oil will coat the pan to pretect the rust. In few times of use, the pan will be shiny black, which is a perfect anti-rust surface.
